Note di vendemmia :
E’ stata la vendemmia piu tardiva di sempre 2/3 settimane, a detta di tutti.
La raccolta normalmente per gli spumanti parte appena dopo la befana: quest’ anno e’ partita ben oltre il 20 di gennaio.
Febbraio e’ stato un mese freddo che non ha velocizzato le maturazioni ma ha permesso maturita’ fenoliche pressocche’ perfette sui bianchi e sui rossi precoci.
A marzo ci sono state diverse pioggie che hanno evitato avvizzimento sui rossi tardivi ma lunghe attese per arrivare alla maturazione fenolica adeguata. Alla fine sono arrivate e chi lavora l’altissima qualita’ e’ davvero contento di quest’annata .
Vinificazioni :
Fermentazioni malolattiche corrette, senza problemi, anche grazie alle temperature giuste di fine Marzo\inizio Aprile.
La raccolta dei vitigni rossi e’ terminata con l’inizio di aprile. I lavori di cantina procedono esclusivamente sulle uve rosse raccolte tardivamente.
Produzione :
La produzione in generale e’ calata del 20/25% ma aspettata a seguito di una vendemmia 2020 sopra le righe

2021 Harvest notes:
It was the latest harvest ever by 2/3 weeks, according to everyone.
The harvest for sparkling wines normally starts around the first few days of January: this year it started well after January 20th.
February was a cold month that did not speed up ripening but allowed for phenolic ripeness development that was almost perfect for white and early red varieties.
In March there was rain that prevented wilting on the late reds but long waits to reach the proper phenolic ripeness. Eventually they arrived and those who work with the highest quality are really happy with this vintage.
Vinification:
Correct malolactic fermentation, without problems, also thanks to the right temperatures at the end of March / beginning of April.
The harvest of the red varieties ended at with the beginning of April. The cellar works proceed exclusively on the late harvested red grapes.
Production:
Production in general dropped by 20/25% but was expected following an over-the-top 2020 harvest.
